Hey y’all! It’s finally the best time of the year!! It’s football time!! Football is a big deal in our house and you can find lots of friends, food and drinks at our house each Saturday watching the game!
We had a big party to celebrate the UT VOLS and Florida game last Saturday and were so excited for the big win! I’m going to share everything that I used to decorate and get ready for the big party!
I started by prepping my chili the night before! I knew it was going to be a busy day the next day so I cooked the beef and onions and put everything in the crock pot and stored it in the refrigerator over night so the next morning the only thing I had to do was pop it in the crock pot. WARNING though- the crock pot vessel will be cold from being in the refrigerator and you can’t put it immediately into the warming part of the crock pot or it will crack! Make sure that you let it warm up or come to room temperature before putting it into the heating element!

The day before I also prepped my pigs in a blanket and put them in the refrigerator on a cookie sheet so all I had to do the big day was pop them into the oven!
Keto Pigs in a Blanket:
1 bag Mozzarella Cheese
1 Block Cream Cheese
3/4 Cup Almond Flour
1 Package BEEF Lil Smokies
Preheat oven to 400 degrees. Put entire bag mozzarella and block of cream cheese in microwave for one minute. Mix well and add almond flour in 1/4 cup increments. Mix all ingredients well and put between two sheets of parchment paper. Use rolling pin to roll out into thin layer. Cut into thin strips. Put one beef smoky and roll up to have dough cover. Place on greased cookie sheet and bake for 20 minutes or until golden brown.
The pigs in a blanket are always a huge hit and are so delicious! They also warm up perfectly for breakfast or a snack the next day!
For this party we also made Lobster dip! It was delicious!
Lobster Dip:
1 16 oz. Velveeta cheese block
1 bag frozen spinach cooked and drained
1 can original Rotel drained
1 package fresh Lobster meat cut into chunks
Cut Velveeta cheese into chunks and warm in sauce pan. Add all other ingredients until cooked and warm. Serve with tortilla chips!

My favorite thing to serve this time of year is definitely a pumpkin roll!! I have *perfected* the keto pumpkin roll! it is so delicious and you’d never know it was keto!
Keto Pumpkin Roll
Pumpkin Cake:
4 Large eggs
1/2 cup Erythritol sweetener
2/3 cup Canned Pumpkin
3/4 cup Almond Flour
1/2 tsp Pumpkin Pie Spice
1 tbsp Baking Powder
Cream Cheese Filling:
1/4 cup Swerve Powdered Sugar
1 tsp Vanilla
1/2 tsp Cinnamon
2 tbsp Butter, softened
8 oz. Cream Cheese
Preheat oven to 375 degrees.
Spray your cookie sheet with non-stick spray and then lay down parchment paper over it (MUST be parchment paper- aluminum foil will not work!) then spray the top of the parchment paper and let it hang over the edges to help you roll the cake after it comes out of the oven!
I mix all of my wet ingredients for the cake first and then add in the almond flour 1/4 C at a time and the sweetener as well, folding the dry ingredients in with the wet ingredients.
Spread the cake mixture evenly on the cookie sheet and parchment paper. It will be a very thin layer.
Cook for 17-20 minutes (17 is always perfect for me) and you should get the perfect sponge cake! Take out of the oven when edges become golden.
Immediately take the edges of your parchment paper and roll the cake from end to end (like a cinnamon roll) and let cool completely on a cooling rack.
In the meantime you can mix all of your cream cheese mixture ingredients.
When the cake is cooled, unroll the cake and spread the cream cheese mixture evenly on top. Then roll it back up and sprinkle with Swerve powdered sugar.
I prefer my pumpkin roll to be cold, but you can eat immediately!
